Sweet Chili Garlic Chicken Ramen

So we all have the one kid that won’t eat ANYTHING right?!? Right now I have one stuck on Top Ramen and that’s about all I can get her to eat. So I decided to try a ramen dish last night, which she didn’t eat (not a surprise) but it was delicious, so I thought I would share!!

  • 3 Chicken Breast

  • 4 tbsp Soy Sauce

  • 3 tbsp Sweet Thai Chili Sauce

  • 1 tbsp Sesame Seeds

Cut chicken into bite-size pieces and add sauces and sesame seeds in a bowl or bag to marinate for 3-12 hours.

  • 1 Onion Diced

  • 1 tbsp Olive Oil

Sauté onion in olive oil until translucent, add chicken. then season with:

  • 2-3 tbsp Minced Garlic

  • 1 tsp Paprika

  • 1 tsp Ground (or fresh) Ginger

  • Salt & Pepper

Cook until chicken is done. Then add:

  • 4 Cups of Low Sodium Chicken Broth

Bring to boil and add:

  • 8 0z. package of Ramen Noodles

Once the noodles are cooked, add in:

  • 1 cup Heavy Cream

Cook for another minute or two then top with:

  • 4-5 Chopped Green Onions

Serve Hot!

You could totally customize this recipe, adding in an egg, seasonings, or veggies of your choice, which I probably will next time since the picky kid didn’t eat it anyways!

Those who did eat it loved it!!
